安溪铁观音名称由来 特征 保存方法

铁观音于民国八年自福建安溪引进木栅区试种,分「红心铁观音」及「青心铁观音」两种,主要产区在文山期树属横张型,枝干粗硬,叶较稀松,芽少叶厚,产量不高,但制包种茶品质高,产期较青心乌龙晚。其树形稍,叶呈椭圆形,叶厚肉多。叶片平坦展开,适宜制种铁观音茶。


安溪铁观音名称由来


清雍正年间,安溪西坪上尧茶农魏饮品佳茗。为乌龙茶之极品。其条索紧结,呈金黄色,俗称蜻蜓头,叶青蛙腿。开汤后,汤色金黄浓艳似琥珀,有天然馥郁的兰花香,滋味醇厚甘鲜,回甘悠久,俗称有“音韵”。铁观音茶香高而持久,可谓“七泡有余香”。



安溪铁观音的特征


铁观音是乌龙茶的极品,其品质特征是:茶条卷曲,肥壮圆结,沉重匀整,色泽砂绿,整体形状似蜻蜓头、螺旋体、青蛙腿。冲泡后汤色金黄浓艳似琥珀,有天然馥郁的兰花香,滋味醇厚甘鲜,回甘悠久,俗称有“音韵”。铁观音茶香高而持久,可谓“七泡有余香”。


铁观音的保存



1、生石灰贮存法:选用干燥、封闭的陶瓷坛,放置在干燥、阴凉处,将茶叶用薄牛皮纸包好,扎紧,分层环排于坛的四周,再把灰袋放于茶包中间,装满后密封坛口,灰袋最好每隔1~2个月换一次,这样可使茶叶久存而不变质。


2、木炭贮存法:取木炭1公斤装入小布袋内,放入瓦坛或小口铁箱的底部,然后将包装好的茶叶分层排列其上,直至装满,再密封坛口,装木炭的布袋一般每月应换装一次。


3、暖水瓶贮存法:将铁观音茶叶装进新买的暖水瓶中,然后用白蜡封口并裹以胶布。此法最适用于家庭保管茶叶。


4、化学贮存法:用较厚的塑料袋,将除氧剂固定在一个角上,然后封好茶叶袋,除氧剂在一二天内能将铁观音茶叶的氧气吸收掉,实现除氧封存,效果很好。

Tieguanyin was introduced from Anxi, Fujian Province in 1988 for trial planting, and there are two kinds of Tieguanyin, namely "Red Heart Tieguanyin" and "Green Heart Tieguanyin". In Wenshan period, the trees in the main producing areas are horizontally stretched, with thick branches, loose leaves, few buds and thick leaves, and low yield. However, the quality of packaged tea is high, and the production period is later than that of Qingxin Oolong. Its tree shape is slight, its leaves are oval, and its leaves are thick and fleshy. The flat leaves are suitable for producing Tieguanyin tea.


Origin of Anxi Tieguanyin Name


During the Yongzheng period of Qing Dynasty, Yao tea farmer Wei in Xiping, Anxi had a good drink. It is the best oolong tea. Its rope is tight and golden yellow, commonly known as dragonfly head and leaf frog legs. After the soup is boiled, the color of the soup is golden and rich like amber, and it has a natural fragrance of orchid flowers. It tastes mellow and sweet, and has a long aftertaste, commonly known as "rhyme". Tieguanyin tea has a high and lasting fragrance, which can be described as "seven bubbles with more fragrance".



Characteristics of Tieguanyin in Anxi


Tieguanyin is the best oolong tea, and its quality features are: curly tea bars, fat and round knots, heavy and even, sandy green color, and overall shape like dragonfly head, spiral body and frog legs. After brewing, the soup is golden and rich like amber, with natural fragrant orchid fragrance, mellow and sweet taste, and a long-lasting aftertaste, commonly known as "rhyme". Tieguanyin tea has a high and lasting fragrance, which can be described as "seven bubbles with more fragrance".


Preservation of Tieguanyin



1. Quick lime storage method: select a dry and closed ceramic jar, place it in a dry and cool place, wrap the tea leaves in thin kraft paper, tie them tightly, arrange them around the jar in layers, then put the ash bag in the middle of the tea bag, and seal the mouth of the jar after filling it up. It is best to change the ash bag every 1 ~ 2 months, so that the tea leaves will last for a long time without deterioration.


2. Charcoal storage method: put 1kg of charcoal into a small cloth bag, put it in the bottom of a tile jar or a small iron box, then arrange the packaged tea leaves on it in layers until it is full, and then seal the jar mouth. Generally, the cloth bag filled with charcoal should be changed once a month.


3, thermos bottle storage method: put the tea into the newly bought thermos bottle, then seal it with white wax and wrap it with adhesive tape. This method is most suitable for keeping tea at home.


4. Chemical storage method: fix the deoxidizer in a corner with a thick plastic bag, and then seal the tea bag. The deoxidizer can absorb the oxygen of the tea within one or two days, so as to achieve oxygen removal and storage, and the effect is very good.
